Slow Cooker Sesame Ginger Chicken
Fall means it’s time to break out the slow cooker! What could be better than putting a few ingredients in before leaving for work and coming home to a warm, comforting and healthy meal?! This one’s just as good as any takeout you’ll find, plus you control the ingredients, so you know it’s good for you!
- 4 frozen chicken breasts
- 2 lbs bagged, washed broccoli florets
- 1/3 cup rice vinegar (unseasoned)
- 1/4 cup soy sauce
- 3-1/2 T honey
- 1/4 cup sesame oil
- 1/3 cup peanut oil
- 3 cloves garlic, peeled and roughly chopped
- 1-1/2 inch square piece fresh ginger, peeled and roughly chopped
- 2 T toasted sesame seeds
Directions
Place chicken breasts, broccoli florets and remaining ingredients (except sesame seeds) in slow cooker. Set timer for 7-8 hours on low or 3-4 hours on high. When ready to ready, sprinkle sesame seeds on top. Serve over rice, or enjoy without. Serves 4.
