Recipe: Dark Chocolate Chunky Brownies with Goat Cheese Swirl

Perfect to take to a summer potluck or picnic, this (slightly) healthier version of brownies has a tangy goat cheese layer swirled in with a chunky dark chocolate brownie. Goodness gracious, these are addictive!

Ingredients for Goat Cheese Layer:

8 oz. goat cheese, softened to room temperature
1 T honey
1 egg
1 T gluten-free 1-to-1 baking flour (such as Bob’s Red Mill), or regular flour

Ingredients for Brownie:
3/4 cup butter, softened to room temperature
3 eggs
1 T coconut oil
2/3 cup cocoa powder
2 T honey
1 cup coconut sugar
1 tsp sea salt
1 cup gluten-free 1-to-1 baking flour (such as Bob’s Red Mill), or regular flour
1 cup dark chocolate, roughly chopped (75% or darker)

Directions:

Prepare 13” x 9” baking pan by coating lightly with coconut oil cooking spray. Set aside. Preheat oven to 350o

Mix goat cheese layer in a food processor, blending all ingredients until smooth. Set aside.

In large bowl of stand mixer, combine butter, eggs and coconut oil, mixing until combined. Set aside 2 tablespoons of cocoa powder. Add remaining cocoa powder, honey, coconut sugar, salt, and flour, mixing just until combined. Do not over mix. Add chopped dark chocolate and mix just until incorporated into batter. Do not over mix.

Pour the chocolate layer into prepared pan. Drop the goat cheese mixture on top and swirl the two layers together with a knife.

Bake for 30-35 minutes or until set. Cool, then dust with 2 tablespoons cocoa powder. Enjoy!
