Getting Ready for Summer’s Bounty
This time of year I’m practically giddy every time I go to the grocery store. Just since my last trip, new produce has come into season and I can’t wait to get all those beautiful fruits and vegetables home. The delicious meals I plan around fresh strawberries or crisp asparagus practically make themselves. Over the past several years – since my weight loss and lifestyle change – I’ve come to appreciate the simple elegance of unadorned fruits and vegetables. As much as I used to love baking fruit pies or eating cauliflower doused in cheese, I’ve come to realize that those luscious berries and even that humble cauliflower taste pretty darn good all on their own.
